Gevulde Koeken

Requirements
- For the Dough
- 165 g butter, at room temperature (Campina)
- 150 g white caster sugar
- ¼ lemon, grated zest
- ¼ tsp salt
- ½ egg, at room temperature, beaten
- 1 tbsp water
- 150 g Zeeland flour
- 150 g all-purpose flour
- 1½ tsp baking powder
- For the Filling
- 200 g almond paste
- ½ egg, beaten
- 1 tbsp water
- Additionally Needed
- Flour, for the work surface
- ½ egg, beaten, for brushing
- 24-36 almonds, for topping
Instructions
- Prepare the Dough:
- Place the butter, caster sugar, lemon zest, and salt in a bowl and mix together.
- Add the beaten egg and water, and blend thoroughly.
- Finally, add both types of flour and the baking powder, and knead everything into a dough.
- Wrap the dough in plastic wrap and let it rest in the refrigerator for at least one hour.
- Prepare the Filling:
- In a separate bowl, mix the almond paste with the beaten egg and tablespoon of water until you have a creamy mixture.
- Optionally, transfer the almond paste mixture to a piping bag with a smooth nozzle.
- Preheat the Oven:
- Preheat your oven to 220°C (428°F) and line a baking sheet with parchment paper.
- Assemble the Gevulde Koeken:
- Roll out the dough on a lightly floured work surface to a thickness of 2-3 millimeters.
- Cut or punch out circles of 10 centimeters in diameter and place half of them on the prepared baking sheet. Re-roll any remaining dough.
- Spread the almond paste evenly over the dough circles, leaving a 1½ centimeter border around the edges.
- Lightly moisten the edges of the dough with water and cover each with another dough circle. Press the edges firmly to seal.
- For an extra decorative touch, you can use a fluted cutter of 9-9½ centimeters to shape the cookies.
- Add Toppings and Bake:
- Lightly brush the tops of the cookies with the beaten egg.
- Press three almonds into the center of each cookie and brush again with beaten egg.
- Bake the gevulde koeken in the preheated oven for 13-18 minutes, or until they are golden brown and cooked through.
- Allow the cookies to cool on a wire rack.
